….were you expecting Thyme? Nope…… pictured below we have a Container planted with Parsley, Sage, Rosemary, Oregano and Cilantro. All are winter tough herbs which are evergreen through the winter in zones 9 and 8. Fall is traditional cooking time for the Nelson Family. We love to try out new recipes and return to old favorites. One year I wanted to try out a recipe that used the herb Sage. After searching I discovered that this herb is not available in the Grocery Stores (either fresh or dried) until Fall. Why not grow it yourself and have it available all the time?
Here’s a favorite Fall Recipe:
Creamy Potato Soup
3-4 Russett Potatoes
1 qt Chicken Broth
1 onion, chopped
1 Carrot, chopped
1 stem celery, chopped
1/4 tsp cayenne pepper
1/4 cup peanut butter (yes peanut butter)
salt and pepper to taste.
Peel and cube the potatoes and boil in the the chicken broth.
While the potatoes are boiling saute the onions in butter or olive oil (or a combination of both). After the onions are clear, remove them and saute the carrots and celery until soft.
After the potatoes are cooked add the rest of the veggies and puree ( I use an immersion blender)
Add the cayenne pepper and peanut butter and mix thoroughly. Salt and pepper to taste.
(Do not tell anyone there is peanut butter in this soup and they will love it.)
